German Pancakes

These low carb pancakes are a perfect hunger fix on a Sunday Monday after a sweat session with Alex.

INGREDIENTS:

¼ cup coconut oil
8 eggs 
1 cup almond milk or coconut milk 
½ cup coconut flour 
¼ cup almond flour 
1 tsp vanilla 
Dash salt

DIRECTIONS:

  1. Preheat oven to 425 degrees F

  2. As oven in preheating put coconut oil into 3x13 metal pan. Place in oven just until melted.

  3. Place eggs , milk , coconut flour, almond flour, vanilla and a dash of salt in a blender . Blend until smooth

  4. Pour batter in the metal pan over melted coconut oil

  5. Bake 20-25 minutes until edges are golden and puffy (low carb versions won’t rise as much)


FLUFFIER HIGHER CARB VERSION

INGREDIENTS:

6 eggs 
1 cup milk 
1 cup all purpose flour 
1 tsp vanilla
Dash salt 
3 tbsp butter only in pan

DIRECTIONS:

  1. Preheat oven to 425 degrees F

  2. As oven in preheating put butter into 3x13 metal pan. Place in oven just until melted.

  3. Place eggs , milk ,  flour, vanilla and a dash of salt in a blender . Blend until smooth

  4. Pour batter in the metal pan over butter

  5. Bake 20-25 minutes until edges are golden and puffy
